Asado Life’s Signature Spaghetti Squash

Live-fire cooking is about more than what’s on the grill. It’s about bringing out each ingredient’s natural flavors through fire, smoke, and time. Our signature spaghetti squash is a guest favorite, offering a plant-based option alongside our Chef’s Cuts.

A Different Take on Spaghetti Squash

We start with a fresh spaghetti squash, sliced in half and cleaned of its seeds. We place a peeled Vidalia onion inside each half and secure it with skewers, adding depth as the squash slowly cooks. The interior is generously seasoned with salt and pepper, then lightly rubbed with fat before the exterior is wrapped in foil to protect it from excessive charring.

From there, the squash takes its time.

Rather than cooking directly over the flames, we place it in the smoke box area above the grill, keeping it separate from the meat as it cooks low and slow for several hours. The exact cooking time depends on the size of the squash, but the goal is always the same: tender strands with just the right amount of texture.

Our Ember Roasted Spaghetti Squash is served with Charred Vidalia Onions, Parrilla Grilled Broccolini, Crisp Papas Bravas, Datil Pepper Aioli, Blistered Peppers, and Chimichurri, bringing together smoky, savory, and vibrant flavors in every bite.

Signature Spaghetti Squash Recipe

Ingredients

  • 1 spaghetti squash

  • 1 peeled Vidalia onion

  • Oil or your preferred cooking fat

  • Salt and freshly ground black pepper, to taste

  • Asado Life Signature Chicken Spice, to finish

Directions

  1. Preheat the oven. Set your oven to 375°F.

  2. Prepare the squash. Cut the spaghetti squash in half lengthwise and remove the seeds. Rub the inside lightly with oil and season generously with salt and pepper.

  3. Prepare for roasting. Place the squash halves cut-side down on a lined baking tray.

  4. Roast low and slow. Bake for 45–75 minutes, depending on the size of your squash.

  5. Check for doneness. Insert a fork into the flesh. When the strands pull away easily but still hold their texture, the squash is ready.

  6. Finish with flavor. Gently pull the squash into strands with a fork and finish with Asado Life Signature Chicken Spice for a smoky, savory touch.

For a deeper roast: Prefer a slightly sweeter, more developed flavor? Lower the oven temperature to 350°F and roast for approximately 75–90 minutes, checking for tenderness as it cooks.

Bring it all together with our Datil Pepper Aioli and Chimichurri, available in the market or by request, and bring a little Asado flavor home!
