Out of Office Cocktail

Some of our favorite moments behind the bar are born from the creativity of our team. Our bartenders collaborate regularly to shape our cocktail program, and The Out of Office is a perfect reflection of that shared spirit.

This cocktail was designed as a way to step away from your inbox and hit reset. Bright, tropical, and just indulgent enough, it balances craftsmanship with creativity.

Out of Office Cocktail

At its core is freshly made juice from pineapples roasted over our Urban Asado live-fire parrilla grills. Suspended above wood and coals, the fruit slowly caramelizes, concentrating its natural sugars while picking up smoky depth. The result is a juice that’s richer and more complex than anything you’d get fresh off the press.

The base is layered with our house Orange Vanilla Bitters, which spend a month resting in charred oak barrels with Madagascar vanilla beans. This process softens the sharper citrus edges, infuses warm baking spice notes, and adds a gentle, rounded sweetness that ties the drink together.

At-Home Recipe

Ingredients:

  • 1.5 oz La Luna Mezcal

  • 2 oz pineapple juice

  • 0.75 oz lime juice

  • 0.5 oz Combier

  • 0.5 oz vanilla demerara

  • 2–3 dashes Asado Vanilla Orange Bitters

Method:
Add mezcal, pineapple juice, lime juice, Combier, vanilla demerara, and bitters to a shaker. Fill with ice and shake hard for 8–10 seconds, until well chilled. Strain into a glass filled with pebble or crushed ice.

Optional Garnish:
Finish with grilled pineapple fronds for a tropical presentation.
