A Fresh Take on Caesar
A great Caesar salad seems simple on the surface: crisp romaine, creamy dressing, Parmesan, and croutons. But like many of our favorite dishes, the magic is in the details.
At Asado Life, every component of our Caesar is thoughtfully crafted, from the imported Spanish boquerones in the dressing to the house-made focaccia croutons that add texture and flavor in every bite.
The Secret Is in the Dressing
Traditional Caesar dressing relies on salt-cured anchovies for its signature savory depth.
Our Caesar dressing is built around boquerones imported from Spain. These white anchovies are sourced from the Alboran Sea, located between Spain and the coast of Morocco. Unlike traditional anchovies, which are preserved in salt, boquerones are cured in a brine of vinegar, salt, herbs, and oil.
The result is a brighter, cleaner flavor that delivers all of the rich umami a Caesar dressing needs without the intensely fishy taste many people associate with anchovies.
The dressing itself is made from an egg yolk emulsion blended with Dijon mustard, boquerones, fresh lemon juice, Worcestershire sauce, black pepper, and plenty of aged Parmesan. The result is creamy, balanced, and packed with flavor.
A Different Kind of Crouton
The croutons in our Caesar have a story of their own.
Years ago, while preparing for a cooking demonstration at a local farm, Executive Chef Matt Brown experimented with a different approach to croutons. Instead of large cubes of bread, he created a crisp, bite-sized version that could be incorporated into every forkful. The micro crouton has been part of our Caesar ever since.
We start with our house-made focaccia, pulsing it just enough to create coarse crumbs slightly larger than panko. The crumbs are dried overnight before being baked low and slow until crisp enough to snap between your fingers.
Next, they're tossed in roasted garlic butter, oregano, thyme, sea salt, and smoked paprika before returning to the oven until they reach what Chef calls G.B.A.D. (Golden Brown And Delicious).
The result is a crouton unlike any other. Rather than sitting on top of the salad, these crispy, flavorful crumbs weave throughout every bite, creating a texture that pairs perfectly with the creamy Caesar dressing and fresh romaine.
The Finishing Touches Matter
All of our dressings are made without added salt. Instead, each salad is seasoned to taste by our garde manger chef just before it is served. This final touch allows the flavors of the dressing and ingredients to shine at the exact moment the salad reaches the table.
We also hand-tear every leaf of romaine lettuce rather than cutting it with a knife. This creates a lighter, more natural texture that stands tall on the plate while helping prevent the browning that can occur when lettuce is cut.
