With no oven in the beginning, coals were everything. We filled a cast iron pot with shrimp, house-made chorizo del mar, and salsa criolla, sealed it tight, and buried it directly into a bed of glowing embers.

As these trees are naturally pruned and occasionally removed to maintain optimal growing conditions, their wood is repurposed into charcoal. It’s a thoughtful cycle where nothing is wasted and everything has purpose.
