Made with all house-made ingredients you can take home from the restaurant by request (just BYO tequila!)

Crafted with roasted piña agave, freshly pressed lime juice, house-smoked salt, and grilled pineapple, this live-fire cocktail reflects our philosophy from grill to garnish.

And of course, tequila!

Ingredients

  • 2 oz Blanco Tequila

  • 1 oz Freshly Squeezed Lime Juice

  • 1oz Pineapple Agave

  • 2 dashes Asado Orange Bitters

  • Smoked Salt

  • Grilled Pineapple (Recipe Below)

Directions

  • Rim the glass with smoked salt

  • Add tequila, mix, and bitters to a shaker with ice

  • Shake vigorously

  • Strain over fresh ice

  • Garnish with grilled pineapple

  • Enjoy!

Grilled Pineapple

Grilled pineapple is the flavor that makes our Al Pastor Margarita come alive—and it all starts with the roots of al pastor.

Traditionally, al pastor is cooked on a vertical spit, where marinated pork roasts beneath a crown of pineapple. As it cooks, the pineapple’s juices drip down, balancing the rich, spiced meat with sweetness and acidity. That contrast—savory, smoky, bright, and just a little sweet—is what defines the dish.

We bring that same idea into the glass.

When pineapple hits the fire, its natural sugars caramelize, turning it deeper, smokier, and more complex. In our margarita, it’s not just a garnish—it’s what ties everything together:

  • smoky sweetness from the grill

  • brightness from citrus

  • warmth from tequila

  • a subtle echo of spice

It’s a cocktail built on the same balance as al pastor itself.

How to Grill Pineapple at Home

With one of our Urban Asado Life fire grills:

  • Lightly oil the grates

  • Bring your parrilla to medium-high heat

  • Slice pineapple into rings or spears

  • Place directly on the grill grate

  • Grill 2–4 minutes per side until caramelized with light char

  • Remove and let cool slightly before using

With a gas or charcoal grill:

  • Preheat to medium-high

  • Lightly oil the grates

  • Grill pineapple 2–3 minutes per side until grill marks form

If you’re indoors (no grill):

  • Use a cast iron skillet or grill pan

  • Heat until very hot

  • Lightly oil the pan

  • Cook pineapple 2–3 minutes per side

  • Look for deep golden browning

Pro tip: Don’t overcook, just enough to char!

Clean agave notes from blanco tequila meet the bright citrus of the lime and pineapple agave, with Asado Orange Bitters adding a light aromatic edge. A smoked salt rim brings a hint of savory smoke, while grilled pineapple adds a touch of sweet and acidity for a balanced finish.
